Role summary

Take charge of a specific kitchen section at Kenmaki Aeon Midtown, preparing ingredients and dishes to our recipe and presentation standards.

Key responsibilities

• Take full charge of an assigned kitchen station (e.g. rice, seafood prep, sauces), owning its output during service
• Prepare, portion and marinate ingredients to recipe specifications ahead of and during service
• Execute recipes consistently to Kenmaki's recipe cards and presentation standards
• Manage mise en place and pacing at the station to keep up with order volume during peak hours
• Monitor and maintain stock levels at the station, flagging shortages to the Sous Chef/Head Chef ahead of time
• Maintain cleanliness, organisation and proper storage practices at the assigned station
• Guide and check the work of Demi Chefs and Commis working within the same station
• Follow food safety, hygiene and allergen-handling procedures at all times
• Assist with stock takes and support other stations when needed

Requirements

• At least 2 years' kitchen experience with station-level cooking/prep experience
• Experience in Japanese cuisine or sushi/hand-roll preparation an advantage
• Good knife skills and attention to detail
• Able to work efficiently under time pressure
• Willing to work shifts, including weekends and public holidays
