Job Description

Responsibilities

About us

DUN XIN (ECHO) is an independent livehouse hosting live performances and DJ sets. Alongside the music, we run a kitchen and bar that keeps our crowd, artists, and crew well fed. Food here needs to be tasty, quick, and easy to serve at the busiest moments of a show night.

The role

As Chef, you run our kitchen. You’ll design and cook a menu that works for a livehouse: crowd-friendly bar food and snacks served fast, plus meals for artists and crew. You’ll manage prep, ordering, hygiene, and a small kitchen team, keeping standards high on both quiet nights and sold-out shows.

What you’ll do

  • Plan, cook, and refine a menu suited to a livehouse (shareable plates, finger food, quick-turnaround mains)
  • Prepare and serve food for audiences during doors and between sets
  • Provide artist and crew meals, including hospitality riders and dietary requirements
  • Manage prep and service around show schedules, including rushes before doors and during changeovers
  • Order stock, manage suppliers, and control food costs and waste
  • Maintain food safety, hygiene, and allergen standards in line with [local regulations]
  • Keep the kitchen clean, organised, and well maintained
  • Train and supervise kitchen assistants and part-time staff
  • Work with the bar and front-of-house teams to keep service smooth
  • Cater for private events, launches, and special nights when needed

What we’re looking for

Essential

  • 5+ years of professional kitchen experience (bar, café, pub, or event catering experience is a plus)
  • Able to cook to a high standard quickly and consistently, solo or with a small team
  • Strong knowledge of food safety, hygiene, and allergen handling
  • Good organisation, stock control, and cost awareness
  • Calm under pressure during fast, busy service
  • Able to work evenings, weekends, and public holidays
  • Able to stand for long periods

Nice to have

  • Menu development experience
  • Valid food hygiene certification (e.g. [local certification])
  • Experience with vegetarian, vegan, and allergy-friendly cooking
  • Prior experience in a music venue, bar, or festival kitchen
  • Working knowledge of Mandarin and English
