Role summary

Support the Head Chef in running kitchen operations at Kenmaki Aeon Midtown, supervising the kitchen team and maintaining food quality standards.

Key responsibilities

• Run daily kitchen operations and supervise staff on assigned shifts, deputising for the Head Chef when absent
• Ensure food preparation, portioning and presentation consistently meet recipe standards
• Plan and oversee prep lists and station setup ahead of service to manage peak-hour flow
• Train and coach the CDP, Demi Chef and Commis on techniques, speed and consistency
• Monitor stock levels, freshness and rotation (FIFO), flagging shortages or quality issues
• Conduct inventory counts, assist with ordering and help control food cost and wastage
• Ensure kitchen cleanliness, equipment care and compliance with hygiene and safety standards
• Step in on any station during rushes or staff shortages to keep service on pace
• Support the Head Chef in trialling new recipes, specials and menu adjustments
• Report equipment issues, quality concerns or staffing gaps to the Head Chef promptly

Requirements

• At least 2–3 years' kitchen experience, including some time in a supervisory role
• Experience with Japanese cuisine or sushi/hand-roll preparation an advantage
• Good knife skills and food preparation technique
• Able to work under pressure during peak service
• Willing to work shifts, including weekends and public holidays
