Introduction:

Firebird by Suetomi is a premier fine-dining destination in Singapore, specialising in an exquisite 15-course yakitori experience. Each dish is meticulously crafted to showcase the artistry of Japanese grilling, seasonal ingredients, and exceptional flavour balance.

We are looking for a passionate and dedicated Chef de Partie to join our kitchen team and play an important role in delivering a world-class dining experience. This is an exciting opportunity for chefs who are passionate about Japanese cuisine and eager to develop their skills in fine dining and yakitori.

What You’ll Be Doing:

  • Assist the Head Chef and Sous Chef in the daily kitchen operations and execution of the 15-course yakitori menu.

  • Manage your assigned section, ensuring mise-en-place, preparation, and service are completed to the highest standards.

  • Ensure consistency in the taste, quality, temperature, and presentation of every dish.

  • Maintain a clean, organised, and efficient workstation throughout preparation and service.

  • Assist with ingredient preparation, receiving, storage, stocktaking, and inventory management.

  • Ensure proper care and maintenance of kitchen equipment, tools, and machinery.

  • Follow all food hygiene, safety, and kitchen standards at all times.

  • Work closely with the kitchen team during service and support a smooth and efficient workflow.

  • Participate in training and continuously develop your knowledge of Japanese ingredients, cooking techniques, and yakitori.

We’re Looking for Someone Who:

  • Has previous experience as a Chef de Partie or in a similar kitchen role, preferably within fine dining, Japanese cuisine, or premium hospitality.

  • Holds a valid Food Hygiene Certificate (minimum Level 1).

  • Has a strong understanding of ingredient preparation, food safety, and kitchen operations.

  • Is passionate about cooking, detail-oriented, and committed to maintaining high standards.

  • Has a positive attitude, strong work ethic, and willingness to learn.

  • Japanese cuisine or yakitori experience is advantageous but not compulsory.

Perks & Benefits:

  • Birthday Leave.

  • Medical & Dental Coverage.

  • Competitive Staff Discounts across our restaurant portfolio.

  • Opportunities to train under experienced culinary mentors and develop your expertise in Japanese fine dining and yakitori.

  • Career Growth Opportunities within Ebb & Flow Group.

A renowned Japanese restaurant with a coveted 2-year waitlist in Japan is bringing its exceptional woodfire yakitori to Singapore in partnership with Ebb & Flow Group. Located within the luxurious Mondrian Hotel, our new location will offer an elevated dining experience that marries traditional techniques with a sophisticated atmosphere.
