Description:

• Production & Baking: Prepare breads / pastries, including preparing doughs and fillings, proofing, baking, and decorating as appropriate.
• Cake Decoration: Expertly decorate cakes, pastries, and tarts using buttercream, fondant, and ganache to meet our company’s aesthetic standards.
• Standardization & SOPs: Able to read and follow recipes, using gram-based SOPs to ensure consistency in taste, texture, and appearance across all batches and ensure good quality.
• Inventory & Cost Control: Manage inventory of raw ingredients, and minimize wastage to maintain target food costs.
• Food Safety: Adhere strictly to ensure compliance with food safety policies and procedures, and hygiene standards including personal hygiene procedures.

Qualification:

• At least a SPM/Diploma, Advanced/Higher/Graduate Diploma in Culinary Art, Food & Beverage Services Management or equivalent. Technical education in hospitality or culinary school.
• At least 3 years of pastry kitchen experience in a category hotel or individual restaurant with high standards.
• Possess good leadership and training skills.
• Up to date with sanitation classes.
• Knowledgeable in HACCP..
• Solid knowledge of pastry techniques, dessert plating and bakery fundamentals.
• Creativity and passion for pastry arts with attention to details.
• Familiar with large-scale production for events and à la carte dessert service.
• Understanding of food hygiene, safety and sanitation standards.
• Ability to work flexible hours, including weekends and public holidays.
