An Assistant Kitchen Manager supports the Chef or Kitchen Manager in overseeing kitchen operations, supervising staff, managing food costs, and ensuring quality and safety standards are met.
Key Responsibilities
- Supervise kitchen staff: Oversee line cooks, prep staff, and other kitchen employees during service and prep periods, ensuring tasks are completed efficiently and correctly.
- Food preparation and service: Work alongside the team during busy periods, cover stations when needed, and maintain consistent food quality.
- Operational management: Assist in scheduling, inventory management, ordering supplies, and maintaining prep lists based on projected cover counts.
- Food safety and compliance: Ensure adherence to HACCP principles, sanitation standards, and allergen protocols; maintain HACCP logs and enforce portioning standards.
- Cost control: Monitor food costs, track actual versus theoretical usage, and investigate variances to maintain target food cost percentages.
- Training and coaching: Mentor new staff, demonstrate cooking techniques, and provide guidance to improve team performance.
Required Skills and Qualifications
- Culinary expertise: Strong cooking skills and knowledge of food preparation techniques.
- Leadership and management: Ability to supervise, motivate, and coordinate a diverse kitchen team under pressure.
- Organizational skills: Competence in scheduling, inventory tracking, and workflow optimization.

Pay: RM2,500.00 - RM3,000.00 per month
