The Chef de Cuisine is responsible for overseeing the overall kitchen operations, planning menus, managing food preparation, supervising kitchen staff, maintaining food quality and hygiene standards, and ensuring smooth and efficient kitchen service.

Key Responsibilities

• Manage and supervise the day-to-day operations of the kitchen.
• Plan, develop, and implement menus according to business requirements.
• Prepare and cook high-quality dishes while maintaining consistent taste and presentation.
• Supervise, train, and guide chefs, cooks, and kitchen assistants.
• Allocate duties and monitor the performance of kitchen staff.
• Ensure all food is prepared according to recipes, portion sizes, and quality standards.
• Monitor the quality, freshness, and proper storage of ingredients.
• Manage kitchen inventory and coordinate food purchasing and stock replenishment.
• Control food costs and minimise food wastage.
• Ensure compliance with food safety, hygiene, and workplace safety requirements.
• Maintain cleanliness and proper organisation of the kitchen and food preparation areas.
• Monitor cooking equipment and arrange maintenance or repairs when required.
• Coordinate with management and service staff to ensure timely food preparation and service.
• Handle special dietary requirements and customer requests where applicable.
• Monitor kitchen expenses and maintain appropriate cost controls.
• Introduce new dishes and improve existing recipes where required.
• Ensure the kitchen operates efficiently during busy periods.
• Maintain proper records relating to stock, wastage, food preparation, and kitchen operations.

Requirements

• Relevant culinary qualification or equivalent professional experience.
• Proven experience as a Chef de Cuisine, Executive Chef, Head Chef, or Senior Chef.
• Strong knowledge of cooking techniques, menu planning, and food presentation.
• Good leadership and staff management skills.
