- Job Title: F & B Supervisor
Reports To: Lead Chef / Operation Manager
Job description:
To supervise and coordinate the daily operations of the Food & Beverage Department, ensuring that residents, guests, and staff receive high-quality, safe, hygienic, and efficient food and beverage services.
The F&B Supervisor is responsible for supervising staff, maintaining service standards, monitoring food hygiene, and ensuring that residents' dietary and meal requirements are properly followed.
Responsibilities:
1.Daily F&B Operations
- Supervise the daily operations of the dining area, kitchen service, beverage stations, and other F&B outlets.
- Ensure meals are served according to the scheduled meal times.
- Monitor food presentation, portion control, temperature, taste, and overall quality.
- Ensure dining areas are clean, organized, comfortable, and properly set up before meal service.
- Coordinate with the kitchen team to ensure meals are prepared and served on time.
- Monitor the availability of food, beverages, crockery, cutlery, and other service items.
- Handle residents' and guests' requests or complaints professionally and promptly.
- Work under direct supervision of the Operation Manager.
2.Resident Meal & Dietary Requirements
- Ensure residents receive the correct meals according to their approved meal plans and dietary requirements.
- Coordinate closely with Nursing, Care, Dietitian, and Kitchen teams regarding special diets, allergies, food restrictions, and texture-modified meals.
- Ensure special meals are correctly identified and delivered to the appropriate residents.
- Take extra care to prevent incorrect meal distribution.
- Report any food-related concerns or incidents to the appropriate manager immediately.
3.Staff Supervision
- Supervise, guide, and assign duties to F&B staff on a daily basis.
- Prepare or assist with staff duty rosters and ensure adequate manpower during meal periods.
- Monitor staff attendance, punctuality, grooming, and work performance.
- Train new F&B employees on service standards, hygiene, safety, and SOPs.
- Conduct regular briefings before meal service.
- Address staff performance issues and report serious matters to management.
- Ensure staff follow the resort's policies, procedures, and code of conduct.
4.Food Safety & Hygiene
- Ensure all F&B operations comply with food safety and hygiene requirements.
- Monitor cleanliness of dining areas, service areas, equipment, utensils, and storage areas.
- Ensure proper food handling, storage, temperature control, and prevention of cross-contamination. Conduct regular checks on food expiry dates and storage conditions.
- Ensure staff comply with personal hygiene requirements, including proper uniform, hair restraint, handwashing, and grooming.
- Report any food safety or hygiene issues immediately to management.
- Assist with internal and external food safety audits and inspection
5.Inventory & Cost Control
- Monitor the usage of food, beverages, disposables, crockery, and other F&B supplies.
- Assist with stock-taking and inventory checks.
- Report shortages, wastage, damaged items, or unusual consumption to management.
- Monitor portion control and minimize unnecessary food wastage.
- Ensure proper storage and handling of F&B supplies.
- Assist the Operation Manager with purchasing requirements when required.
6.Customer Service
- Maintain a high standard of customer service for residents, families, visitors, and guests.
- Communicate politely and professionally with residents, including elderly residents who may require additional assistance.
- Respond promptly to complaints, feedback, and special requests.
- Monitor residents' satisfaction with meals and dining services.
- Escalate serious complaints or recurring issues to management.
7.Safety & Emergency Procedures
- Ensure the dining area is safe and free from hazards.
- Ensure tables, chairs, walkways, and service areas are properly arranged to minimize falls and accidents.
- Report spills, broken equipment, damaged furniture, or other hazards immediately.
- Ensure staff are familiar with emergency procedures.
- Assist during emergencies or evacuation procedures when required.
8.Documentation & Reporting
- Complete daily F&B checklists and relevant operational records.
- Maintain records relating to food temperatures, cleaning, stock, wastage, and incidents where applicable.
- Prepare daily or weekly operational reports when required.
- Record and report resident complaints, food service incidents, and staff issues.
- Ensure all required documentation is properly maintained and submitted to management.
Requirements and skills
- Minimum Diploma/Certificate inFood & Beverage Management, Hospitality Management, Culinary Arts, or a related field.
- Minimum 2–3 years of experience in F&B operations, preferably with supervisory experience.
- Experience in a nursing home, retirement resort, hospital, hotel, or healthcare-related F&B environment would be an advantage.
- Strong management skills.
- Effective communication skills.

Pay: RM2,500.00 - RM3,300.00 per month
