Restaurant Manager
Kenmaki is a new temaki (hand-roll) bar opening at Aeon Midtown, serving fresh, made-to-order Japanese hand rolls and sides in a fast-casual format. We're looking for a hands-on Restaurant Manager to lead our founding outlet team.
Role summary
Oversee daily operations of the Kenmaki Aeon Midtown outlet, ensuring smooth front and back of house coordination, guest satisfaction, staff performance and profitability.
Key responsibilities
- Own full accountability for the outlet's day-to-day performance, tracking daily sales, food cost %, labour cost % and wastage against monthly targets
- Manage end-to-end operations including opening/closing procedures, cash reconciliation and shift handovers
- Supervise and coordinate front-of-house and kitchen teams to keep service flow smooth during peak hours
- Recruit, onboard, train, schedule and appraise outlet staff, including handling disciplinary matters when needed
- Set and enforce food safety, hygiene, halal (where applicable) and workplace safety standards, including regular audits
- Handle guest feedback and complaints professionally, using insights to improve service standards
- Prepare and analyse daily/weekly sales, cost and operational reports for management, flagging variances early
- Negotiate with and manage suppliers, place stock orders and control inventory to minimise wastage
- Plan and execute outlet-level promotions, launches and marketing initiatives with management
- Ensure equipment, furniture and outlet condition are properly maintained, reporting issues promptly
- Lead team briefings and build a strong service culture, coaching staff on upselling and guest engagement
- Act as the outlet's main point of contact for mall management, auditors and regulatory visits
Requirements
- At least 2–3 years' experience in an F&B management role (QSR or casual dining preferred)
- Strong leadership and people management skills
- Good understanding of F&B cost control, inventory and P&L
- Familiar with POS systems
- Able to work retail hours, including weekends and public holidays
- Good communication in English and Bahasa Malaysia; Mandarin an advantage
- SPM/Diploma or higher in hospitality, business or a related field preferred
