HEAD BAKER

Frenchies is a French bakery & coffee roaster.

Job Responsibilities

• Baking & producing croissants dough & sourdough bread.
• Lead and manage the daily baking operations, ensuring consistent quality and adherence to recipes and food safety standards.
• Supervise, train, and mentor junior bakers and kitchen staff, fostering a collaborative and high-performance team environment.
• Maintain inventory control of baking supplies, monitor waste, and optimize production efficiency to support cost-effective operations.
• Ensure compliance with Hong Kong health, hygiene, and workplace safety regulations across all baking activities and facilities.

Requirements

• Minimum 5–10 years of professional baking experience, including at least 3 years in a leadership or supervisory capacity.
• Proven expertise in artisanal bread making, viennoiserie, patisserie, and large-scale production techniques.
• Fluency in English; Cantonese or Mandarin is advantageous but not mandatory.
• Hong Kong Permanent Resident status required; valid work authorization without sponsorship needs.
• Strong organizational skills, attention to detail, and ability to thrive in fast-paced morning or night shift environments.

Pay: $25,000.00 - $35,000.00 per month
