Role Purpose

The Outlet Manager is the operational and commercial leader of Mama Shelter Singapore’s restaurant, bar and rooftop pool, with ownership of daily operations, guest experience, revenue and profitability.

This is a hands-on leadership role combining strong commercial awareness, team development and Mama personality to create F&B experiences that are lively, welcoming, fun and consistently well run.

Key Responsibilities

F&B Operations & Guest Experience

• Lead daily restaurant, bar and rooftop pool operations, ensuring smooth and efficient service.
• Maintain high standards of service, cleanliness, presentation and operational readiness.
• Remain visible and hands-on during peak periods, supporting the team and engaging with guests.
• Ensure the overall experience reflects Mama’s lively, social, approachable and playful personality.
• Use guest feedback and business trends to continuously improve service and the overall F&B experience.

Revenue & Commercial Performance

• Take ownership of outlet revenue, profitability and overall commercial performance.
• Drive sales, covers and average spend against budget and forecast.
• Grow revenue through upselling, promotions, events, group bookings and F&B activations.
• Monitor daily, weekly and monthly KPIs and take corrective action where required.
• Work closely with Culinary, Sales & Marketing and Events to maximise revenue opportunities.

P&L, Labour & Cost Management

• Manage outlet P&L, payroll, operating expenses, F&B costs, wastage and margins.
• Optimise manpower, scheduling and productivity according to business levels.
• Manage inventory, purchasing, stock control and operational supplies.
• Support budgeting and forecasting and identify opportunities to improve profitability without compromising the guest experience.
• Analyse actual performance against budget and forecast, highlighting variances and corrective actions.

POS, Controls & Reporting

• Manage daily POS operations, billing controls, discounts, voids, refunds and revenue reconciliation.
• Review sales and POS reports, investigate discrepancies and ensure accurate cash and revenue controls.
• Prepare daily, weekly and monthly performance reports covering revenue, covers, average spend, costs, labour and key KPIs.
• Provide accurate P&L analysis, forecasts and performance updates for the General Manager, Management and Owners.

Team Leadership

• Recruit, lead, coach and develop the FOH and Bar teams, including the Assistant Outlet Manager.
• Build a positive, energetic and accountable team culture that reflects Mama Shelter.
• Manage manpower planning, scheduling, appraisals, performance and development.
• Develop the team’s commercial awareness, including upselling, average spend and cost consciousness.
• Lead by example through strong floor presence, teamwork and genuine hospitality.

Management & Compliance

• Support the General Manager in achieving F&B business objectives, financial targets and operational priorities.
• Collaborate closely with Culinary, Finance, People & Culture, Purchasing, Sales & Marketing and Events.
• Ensure compliance with Mama Shelter/Accor service, grooming, hygiene, safety and operational standards.
• Take ownership of operational challenges and act quickly to protect guest satisfaction, team performance and profitability.

What We’re Looking For

• Proven experience as an Outlet Manager, Restaurant Manager, F&B Manager or similar leadership role in a high-volume hotel, restaurant or lifestyle hospitality environment.
• Strong restaurant and bar operational experience; rooftop or lifestyle venue experience is an advantage.
• Strong commercial knowledge of revenue, P&L, labour cost, payroll, inventory, budgeting and forecasting.
• Demonstrated ability to drive sales, covers, average spend and profitability.
• Strong people leadership, coaching and team-development skills.
• Knowledge and hands-on experience with Oracle MICROS Simphony POS is a plus.
• Strong analytical, communication and cross-department collaboration skills.
• Highly hands-on, commercially minded and comfortable leading from the floor.
