F&B Supervisor — Roles & Duties
1. Daily Operations
Supervise daily restaurant/café operations and ensure smooth service.
Ensure opening and closing procedures are completed properly.
Monitor customer flow, table turnover, and service efficiency.
Ensure all operational standards and company procedures are followed.
2. Staff Supervision
Lead, brief, and assign duties to service, bar, and kitchen staff.
Monitor staff performance, attendance, grooming, and work discipline.
Train new employees on service standards, SOPs, menu knowledge, and workplace procedures.
Manage staff deployment during peak and non-peak periods.
3. Customer Service
Ensure customers receive friendly, efficient, and professional service.
Handle customer enquiries, feedback, and complaints appropriately.
Resolve service issues promptly and escalate serious matters to the Manager.
4. Food & Beverage Quality
Monitor food and beverage quality, presentation, portion control, and consistency.
Ensure products are prepared and served according to established standards.
Check stock levels and communicate replenishment requirements to the relevant person.
5. Hygiene & Food Safety
Ensure staff comply with food safety, personal hygiene, cleaning, and sanitation requirements.
Conduct regular checks of dining areas, kitchen/service areas, equipment, and storage areas.
Ensure cleaning schedules and food safety procedures are properly followed.
6. Inventory & Cost Control
Assist with daily stock checks and inventory control.
Monitor wastage, spoilage, breakages, and incorrect orders.
Ensure proper storage and handling of food, beverages, and operating supplies.
Report stock discrepancies to the Manager.
7. Cash & Administrative Duties
Assist with cashiering and daily sales reconciliation when required.
Ensure proper handling of cash, POS transactions, discounts, and refunds.
Complete daily operational records, checklists, and incident reports.
8. Sales & Business Performance
Monitor daily sales and identify opportunities to improve revenue.
Promote menu items, promotions, and upselling opportunities.
Provide feedback to management regarding customer preferences, operational issues, and areas for improvement.
9. Safety & Compliance
Ensure compliance with workplace safety, fire safety, food safety, and company policies.
Report equipment faults, accidents, hazards, and maintenance issues promptly.
Ensure staff follow safe work practices at all times.
10. Other Responsibilities
Support the Restaurant/Café Manager in achieving operational and business targets.
Assist in staff scheduling and manpower planning.
Coordinate between front-of-house and kitchen teams.
Perform other duties reasonably assigned by management.
