Mandarin Oriental, Desaru Coast is looking for a F&B Captain to join our Food & Beverage Department.

About The Job

The F&B Captain is responsible for overseeing the smooth operation of an assigned section or service area within the restaurant or outlet. The role provides guidance and support to F&B colleagues, ensures consistent delivery of exceptional guest service, and maintains the highest standards of food, beverage, hygiene, and service in accordance with the hotel's luxury standards.

As F&B Captain you will be responsible for the following duties:

Guest Service

  • Welcome and engage with guests in a warm, professional, and personalized manner.
  • Ensure guests receive attentive, efficient, and seamless service throughout their dining experience.
  • Take food and beverage orders accurately and provide recommendations based on guest preferences.
  • Demonstrate thorough knowledge of menus, ingredients, preparation methods, beverages, and current promotions.
  • Anticipate guest needs and proactively respond to requests.
  • Handle guest feedback and complaints professionally and escalate matters to the Outlet Manager when necessary.
  • Ensure all special requests, dietary requirements, allergies, and guest preferences are communicated accurately to the relevant team members.
  • Conduct regular table checks to ensure guest satisfaction throughout the meal.

Section & Service Management

  • Take responsibility for the smooth operation of the assigned section during the shift.
  • Ensure tables are properly set and maintained according to outlet standards.
  • Coordinate the timing of food and beverage service with the Kitchen and Bar.
  • Ensure orders are served accurately, promptly, and according to established standards.
  • Monitor table status and coordinate with the service team to maintain efficient table turnover.
  • Conduct quality checks on food and beverages before they are presented to guests.
  • Ensure clearing, resetting, and mise en place are completed efficiently.
  • Assist with opening and closing procedures according to departmental SOPs.

Team Supervision & Leadership

  • Guide, coach, and support F&B colleagues in delivering consistent service standards.
  • Allocate tasks and assist in coordinating the team during the shift.
  • Provide on-the-job training and share product and service knowledge with junior colleagues.
  • Monitor colleagues' adherence to service standards, grooming, hygiene, and departmental SOPs.
  • Lead by example and promote a positive and professional working environment.
  • Communicate operational updates, guest preferences, and special requirements during briefings.
  • Assist the Outlet Manager with daily operational matters when required.

Guest Experience & Brand Standards

  • Deliver service in accordance with Mandarin Oriental's luxury service standards and the hotel's service philosophy.
  • Recognize VIPs, repeat guests, and special occasions and ensure appropriate service arrangements are made.
  • Create personalized and memorable experiences through attentive and thoughtful service.
  • Maintain a strong knowledge of the hotel's facilities, outlets, activities, and services to assist guests with enquiries.
  • Support the outlet in achieving guest satisfaction and service quality targets.

Hygiene, Safety & Compliance

  • Ensure compliance with food safety, hygiene, HACCP, and health and safety requirements.
  • Maintain high standards of cleanliness and organization within the assigned section and service areas.
  • Ensure proper handling and storage of food and beverage products.
  • Report any hygiene, safety, maintenance, or equipment issues to the supervisor promptly.
  • Ensure all departmental policies and SOPs are consistently followed.

Stock & Cost Control

  • Monitor the availability and proper use of operating supplies, tableware, and equipment.
  • Minimize wastage and ensure appropriate portion control and product handling.
  • Assist with stocktaking and inventory checks when required.
  • Report shortages, breakages, or discrepancies to the supervisor.
  • Support the outlet in achieving departmental cost-control objectives.

As F&B Captain, We Expect From You

Educational Background

  • Minimum 2–3 years of experience in Food & Beverage, preferably within a luxury hotel, resort, or high-end restaurant.
  • Previous experience as an F&B Captain, Senior Waiter/Waitress, or equivalent supervisory role is preferred.
  • Diploma or certificate in Hospitality, Food & Beverage, or a related field is an advantage.

Skills

Strong knowledge of restaurant service, food and beverage products, and service standards.

Good command of English; additional languages are an advantage.

Excellent communication and interpersonal skills.

Strong guest-service orientation with a passion for hospitality.

Confident in guiding and coaching junior colleagues.

Able to work effectively under pressure in a fast-paced environment.

Willing to work shifts, weekends, public holidays, and according to operational requirements.
