ABOUT THE POSITION

DJDH Ramen is seeking a genuine freshgraduate from culinary school with zero full-time commercial kitchenexperience.

This entry-level position is intentionallydesigned for someone beginning their culinary career from the ground up. Thesuccessful candidate will receive direct, hands-on training and daily guidancefrom our Chef-Owner.

Our objective is to develop strongprofessional habits from Day 1, with exceptional kitchen cleanliness, foodsafety, discipline, consistency and respect for ingredients forming thefoundation of all culinary training.

KEY RESPONSIBILITIES

• Receive direct culinary training and mentorship from the Chef-Owner
• Follow DJDH Ramen’s structured culinary development programme
• Maintain exceptional personal hygiene, kitchen cleanliness and food-safety standards
• Practise strict “clean as you go” discipline throughout every shift
• Perform opening, closing and scheduled deep-cleaning duties
• Clean and sanitise kitchen equipment, workstations, utensils and storage areas
• Follow proper food receiving, storage, labelling, dating and temperature-control procedures
• Apply FIFO/FEFO stock-rotation practices
• Prevent cross-contamination and follow allergen-control procedures
• Complete food-safety, temperature, cleaning and preparation records accurately
• Assist with basic mise en place and ingredient preparation
• Progressively learn broth, tare, aroma oil, toppings and ramen preparation
• Learn correct noodle timing, portioning, assembly and plating
• Follow standard recipes and presentation requirements consistently
• Assist with stock-taking, inventory control and food-wastage reduction
• Support all kitchen operations as part of a small and closely coordinated team
• Perform other reasonable kitchen duties assigned by the Chef-Owner

MINIMUM REQUIREMENTS

• Fresh graduate from a recognised culinary school or culinary programme
• Culinary certificate, Nitec, Higher Nitec, diploma or equivalent culinary qualification
• Strictly zero years of post-graduation or full-time commercial kitchen experience
• School-required internships or industrial attachments are acceptable
• This vacancy is specifically intended for a fresh graduate; applicants with prior full-time employment as a chef or cook will not be considered
• Must already possess a valid WSQ Food Safety Course (FSC) Level 1 certification or higher
• Must provide proof of certification before commencing food-handling duties
• Willing to begin with foundational cleaning, sanitation, preparation and kitchen-discipline training
• Coachable, disciplined, humble and willing to follow instructions closely
• Strong commitment to cleanliness, food safety and consistent work standards
• Able to work in a fast-paced kitchen and perform duties requiring prolonged standing
• Able to work according to the restaurant roster, including weekends and public holidays

TRAINING AND CAREER DEVELOPMENT

The selected candidate will be personallytrained by the Chef-Owner in a smaller-kitchen environment, allowing for closesupervision, immediate feedback and accelerated practical development.

Indicative progression:

• 0–1 month: Culinary Graduate Trainee
• 1–3 months: Junior Commis Chef
• 3–6 months: Commis Chef
• 6–12 months: Senior Commis / Station Chef
• 12–18 months: Demi Sous Chef / Kitchen Supervisor
• 18–24 months: Junior Sous Chef
• 24–36 months: Sous Chef / Kitchen Operations Lead

Progression is not automatic and may beaccelerated or extended according to competency, attitude, reliability,cleanliness, food-safety performance and operational readiness.
