About Us:

We are a new artisan bakery opening in Johor Bahru, specialising in Japanese bakery breads and French

viennoiserie. We are looking for an experienced Head Chef to lead our bread and pastry programme.

Job Description:

You will own the kitchen — the menu, the standards, the team, and the results. Reporting directly to the

Director, you will work alongside our Head Baker, local sous chef, and Store Supervisor.

Key Responsibilities:

·       Develop and own the full menu of bread and cake items, spanning Japanese bakery breads and a few selection of French viennoiserie items.

·       Lead research & development: create new items and continuously improve existing ones.

·       Draft all bread and cake recipes, formulations, and production methods, and compile them into a

master recipe document, which shall be maintained, updated, and held as a company asset.

·       Work closely with the local sous chef to plan and arrange ingredient sourcing and delivery.

·       Design and implement kitchen workflow, production schedules, and hygiene and quality standards.

Requirements:

Experience:

. Proven experience as a Head Chef, Head Baker, or Chef de Partie (boulangerie/pâtisserie) in a

Japanese bakery.

. Demonstrated R&D capability — able to develop, document, and standardise recipes for consistent

production.

. Able to train and lead a local kitchen team; working English.

. Open to international candidates — Employment Pass sponsored and borne by the Company.

• Amam Dacotan – Tokyo and Kyoto

• Dacomecca – Fukuoka

• Maribu Bakery – Okinawa

Compensation & Benefits

• Base salary: RM10,000 per month.

• Performance commission on sales above the monthly break-even target (see KPI framework below).

• Equity pathway: up to 10% shareholding in the Company, vesting against performance milestones

under a separate share/vesting agreement.

KPI Framework

KPIs are measured on net sales (excluding SST). The store is expected to operate at break-even from the

first month:

Phase Monthly net sales target Benchmark

Months 1–3 RM220,000+ Break-even from launch

Months 4–6 RM240,000 – 260,000 ~110–120% of break-even

Months 7–12 RM270,000+ ~125% of break-even

Year 2 onwards RM300,000+ ~135% of break-even

Commission:

• 2% of monthly net sales between RM220,000 and RM260,000 (portion above RM220,000)

• 3% of the portion above RM260,000

Operational KPIs include:

• Food cost ≤32–35% of sales

• Wastage ≤5–8% of production

• 5–6 new SKUs per quarter

Equity vests in tranches against sustained sales and profitability milestones, capped at 10%.
