Job Responsibilities
- Prepare and present high-quality chocolate products, desserts, pastries, and confectionery items in accordance with established recipes, presentation standards, and quality expectations.
- Assist in the production of handcrafted chocolates, pralines, bonbons, truffles, chocolate decorations, and seasonal specialty items.
- Perform chocolate tempering, moulding, enrobing, and finishing techniques to ensure consistency, shine, texture, and product quality.
- Support the day-to-day operations of the pastry and chocolate kitchen to ensure efficient workflow and timely service.
- Assist senior chefs with food preparation, chocolate production, dessert plating, and execution of menu offerings.
- Create and maintain chocolate garnishes, decorative showpieces, and premium presentations for retail displays, events, and special occasions.
- Uphold the highest standards of food safety, hygiene, and sanitation throughout all stages of preparation and production.
- Maintain a clean, organised, and well-stocked workstation, ensuring proper storage and handling of chocolate and related ingredients.
- Monitor product quality, freshness, portion consistency, and visual presentation to enhance the guest experience.
- Adhere to all kitchen policies, operational procedures, and workplace safety guidelines.
- Minimise food and ingredient wastage through proper handling, stock rotation, and storage practices.
- Keep up to date with chocolate trends, techniques, and innovations to support continuous product improvement.
- Undertake any other duties assigned by Chefs or kitchen leadership team.
Job Requirements
- 1 to 2 years of relevant culinary experience, preferably in a pastry, dessert, chocolatier, hotel, restaurant, or hospitality environment.
- Culinary, Pastry, or Patisserie qualification is preferred.
- Hands-on experience in chocolate preparation, tempering, moulding, decorating, or confectionery production will be highly advantageous.
- Passion for chocolate craftsmanship, dessert production, and creating high-quality confectionery products.
- Knowledge of chocolate handling techniques, ingredient functionality, and quality standards.
- Good understanding of food safety, hygiene, and sanitation regulations.
- Ability to thrive in a fast-paced and dynamic kitchen environment while maintaining attention to detail.
- Strong artistic flair and creativity in chocolate decoration, presentation, and finishing.
- Flexible and able to work rotating shifts, weekends, and public holidays
