Responsible for the management and achievement of profit for all food and beverage operations in the hotel including restaurants, bars, kitchen operations, catering and banquet operations. Adhere to local regulations concerning health, safety, or other compliance requirements, as well as brand standards and local policies and procedures.
RESPONSIBILITIES:
- Provide good, efficient and consistent high quality of service to the guest.
- Assist Banquet Manager to recruit, train and coach F&B Team and Casual Labor Staffs.
- Create and maintain a pleasant working environment and foster teamwork at all times.
- Together with the Banquet Manager fully responsible and accountable for the department operating budget incl. Revenues, Expenses, Labor costs and profitability.
- Constantly find ways to further increase revenue without sacrificing pre-determined standards.
- Carry out staff appraisals and filter down own objectives to the Banquet Manager.
- Propose appropriate staff movements and promotions to the Banquet Manager.
- Discipline staff and report all misconduct to the Banquet Manager.
- Communicate Guest Feedback to the Banquet Manager at once and through the use of the Department log book.
- Ensure effective communication between Banquet Supervisor, Banquet Captain, Banquet Waiter and Casual labor staffs at all times.
- Ensure that all F&B Team are briefed regularly on the Hotels Policies and Procedures.
- Enhance, follow thru and effectively run a Departmental Mailing list.
- Have full knowledge of all potential function room layouts.
- Have full knowledge of the Events Seating / Table plan.
- To ensure all Function rooms set up according to the Event Order and Standards requirement.
- Assists Banquet Manager to co-ordinate all aspects of the point of Sales implementation.
- Assists Banquet Manger to be responsibility for the timely and complete set up in accordance with the predetermined Policies & Procedures and Banquet Event Orders of all meal periods in all Banquet function rooms at all times.
- Assists Banquet Manger to be responsible for the adequate staffing of all Banquet function at any time.
- Assists Banquet Manager to ensuring delivering F&B according to timing/sequence of order.
- Assists Banquet Manager to ensure all utensils, glasses, chinaware are always clean.
- Assists Banquet Manager to ensure tables are clean and reset according to pre-determined standards.
- Consistently keep all areas for Banquet work stations clear, clean and tidy.
- Attend F&B Daily briefings in the absence of the Banquet Manager.
- Attend B.E.O Co-ordination Meeting in the absence of the Banquet Manager.
- In Absence of Banquet Manager to continuously enhance, follow thru and effectively run a Departmental Mailing List.
- Report all guest comments to the Banquet Manager immediately.
- Hand in all lost and found items without delay.
- Assists to ensuring that mis-en place is always done accordingly to Banquet SOP Service Standard
- Assist in setting up tables, stages etc. in various function rooms as and when required.
- Actively participate in all training activities
- Ensure full cooperation with all F&B Team and other supporting Departments
- Assists Banquet Manager ensuring that, in conjunction with the Chief Steward a breakage prevention program as well as adequate Banquet par stocks are in place.
- Assists to be responsible for the effective execution of outside catering events (in future).
- Follow instructions given by the Banquet Manager, Director F&B and perform any other reasonable duties as required by the Division Head from time to time.
- Fully participate and serve guests during outside catering as and when assigned (In future)
- Always check accuracy of bills presented to guests, together with a guest’s comment card.
- Always check accuracy on the Closing Function Report.
- Commitment to the standard of the Health, Safety, Quality and Environmental protection as per hotel policies.
- Fully Participate in the effective implementation of the Banquet SOP Policy & Procedure.
- Together with the Banquet Manager closely supervise and co-ordinate the Banquet Service Standard for all Banquet Teams in the Department.
- Together with the Banquet Manager responsible for the implementation and follow up Training of Banquet Standard Operating Procedure.
- Fully organize and monitor all Training activities.
- Prepare and update Job Descriptions to Banquet Manager for all positions in the Department.

ABILITIES / KEY COMPETENCIES / SKILLS:
- Good Communication and writing skills
- Alcohol awareness certification and/or food service permit or valid health/food handler card as required by local government agency.
- Problem solving, reasoning, motivating, organizational and training abilities.
EDUCATION / CERTIFICATES / EXPERIENCE:
- Bachelor’s degree in Hotel Management, culinary arts, or related field.
- 5 years related experience, including management experience, or an equivalent combination of education and experience.
