The Operations Manager oversees the daily operations of the hospital’s inpatient food service, ensuring timely, safe, and high-quality meal preparation and delivery to all wards.
This role is responsible for managing kitchen production, patient diet accuracy, food safety compliance, manpower planning, prepare necessary documents and coordination with the hospital’s Dietetics & Nutrition Department. The manager ensures all workflows meet hospital standards, MSQH/MOH guidelines, and contractual KPIs.

Qualifications:
- Degree in Hospitality Management, Culinary Arts, Foodservice Management, Nutrition, or related field.
- Minimum 3–5 years’ experience in hospital food service or large-scale catering operations.
- Strong knowledge of food safety regulations and hospital dietary standards.
- Excellent leadership, communication, and problem-solving skills.
- Ability to work in a fast-paced, high-pressure healthcare environment.
- Able to work immediately.
Key Responsibilities:
1. Daily Operations Management
- Oversee the entire meal service workflow: menu preparation, cooking, plating, dispatch, and tray retrieval.
- Ensure all meal services (breakfast, lunch, tea, dinner, supper) are executed on schedule according to hospital timelines.
- Monitor portioning, meal temperature control, and dish presentation.
- Ensure all dietary modifications (diabetic, renal, bland, soft diet, allergy cases, etc.) are followed accurately.
2. Staff Supervision & Scheduling
- Manage kitchen staff, diet clerks, ward service staff (PSD), cooks, cleaners, and stewards.
- Prepare weekly/monthly manpower schedules and adjust staffing levels for peak and off-peak hours.
- Conduct staff briefings, performance monitoring, and discipline management.
- Ensure all staff maintain proper grooming, hygiene, and uniform standards.
3. Compliance, Safety & Quality Control
- Ensure all operations comply with MOH, MSQH, HACCP, and food safety regulations.
- Oversee food sampling, temperature logs, sanitation schedules, and equipment hygiene.
- Ensure staff have valid Food Handler Certificates and Typhoid Vaccination (Pelalian Tifoid).
- Conduct internal audits and corrective actions for non-compliance.
4. Coordination with Hospital Departments
- Work closely with the Dietetics & Nutrition Department regarding diet updates, menu changes, and patient dietary needs.
- Communicate with Nursing Units about meal issues, isolation precautions, and special requests.
- Attend hospital coordination meetings and present operational updates and KPI reports.
5. Inventory & Cost Control
- Monitor stock levels of raw materials, dry store items, disposable ware, and chemicals.
- Approve daily requisitions and ensure proper FIFO/FEFO inventory practices.
- Reduce food wastage, control portion sizes, and ensure efficient use of resources.
6. Equipment & Facility Management
- Ensure all kitchen equipment (ovens, chillers, bain-marie, thermal trolleys) are in good working condition.
- Coordinate with maintenance teams for repairs and preventive maintenance.
- Ensure the kitchen, plating area, and dishwashing areas are clean and functional.
7. Customer Service & Issue Resolution
- Address patient feedback, complaints, and service recovery promptly.
- Conduct ward rounds or random tray inspections to monitor service quality.
- Improve patient satisfaction scores related to meal service.
8. Training & Development
- Train new staff on SOPs, hygiene standards, safety procedures, and diet knowledge.
- Conduct regular refresher training sessions to maintain high service standards.
- Identify skill gaps and propose training programs.
9. Reporting & Documentation
- Prepare daily/weekly/monthly reports: meal count summaries, wastage reports, complaints, staff attendance, and audit compliance.
- Maintain proper documentation for MSQH and internal audits.
- Track KPI performance and implement improvement plans.
