Job Summary

As an assistant sushi chef in a Japanese restaurant, you will handle raw fish and ingredients, manage food stock, and ensure all orders meet quality standards with attention to detail.

Responsibilities

• Cut, slice, and fillet various fish types precisely to prepare sushi dishes that meet quality and presentation standards
• Inspect fruits, vegetables, and fish for freshness and suitability for sushi preparation
• Prepare sushi dishes following portion, presentation, and food safety guidelines
• Maintain a clean and sanitary work area to prevent contamination and comply with hygiene standards
• Take regular inventory of food supplies and ingredients to manage stock and minimize waste
• Report kitchen equipment issues promptly to the executive chef to avoid disruptions
• Sterilize utensils, instruments, and equipment before use to uphold food safety standards
• Communicate clearly with wait staff to accommodate special requests and allergy considerations
• Engage customers to provide information and enhance their dining experience

Preferred competencies and qualifications

• Collaborate effectively with team members and deliver excellent customer service through strong interpersonal skills
• Support colleagues and work efficiently in a fast-paced kitchen environment
• Knowledge of Japanese language to communicate with suppliers in Japan, aiding supplier coordination
• Minimum of 2 years’ experience in a similar sushi chef role
