To supervise and manage the daily operations of an assigned kitchen section, ensuring food is prepared and presented according to the resort's quality standards while maintaining food safety, hygiene, and efficient kitchen operations.
Key Responsibilities
- Supervise the daily operations of the assigned kitchen section.
- Prepare, cook, and present food in accordance with the resort's recipes, quality standards, and presentation requirements.
- Ensure all food is prepared and served on time while maintaining consistency in quality.
- Supervise, guide, and train Commis Chefs and kitchen assistants within the assigned section.
- Monitor stock levels and ensure the proper storage, handling, and rotation of food ingredients (FIFO).
- Inspect the quality and freshness of ingredients before use.
- Maintain cleanliness, hygiene, and food safety standards in compliance with the resort's policies and procedures.
- Report equipment faults, maintenance issues, or operational concerns to the Sous Chef or Executive Chef.
- Assist in menu planning, recipe standardization, and controlling food costs when required.
- Perform any other duties assigned by the Head Chef, or Management from time to time.
Job Requirements
- Minimum SPM or equivalent.
- Certificate or Diploma in Culinary Arts or a related field is preferred.
- Minimum 3–5 years of experience in a hotel, resort, or restaurant kitchen, including experience in supervising a kitchen section.
- Good knowledge of food preparation, food safety, hygiene, and kitchen operations.
- Strong leadership, communication, and teamwork skills.
- Able to work under pressure in a fast-paced environment.
- Willing to work on rotating shifts, weekends, and public holidays.
