Sous Chef

Introduction:
Nestled in the heart of Singapore, Willow is an Asian fine-dining restaurant renowned for its innovative interpretation of traditional Asian flavours. With a focus on seasonality, craftsmanship, and contemporary culinary techniques, we strive to deliver a refined yet soulful dining experience. We are seeking a skilled and motivated Sous Chef to support our Head Chef in leading the kitchen, driving culinary excellence, and shaping the continuous evolution of our cuisine.

Key Responsibilities:

  • Support the Head Chef in overseeing daily kitchen operations to ensure consistent, high-quality execution of dishes.
  • Lead and supervise kitchen stations, maintaining precision, efficiency, and adherence to Willow’s culinary standards.
  • Assist in menu development, contributing innovative ideas rooted in seasonality, creativity, and Asian fine-dining sensibilities.
  • Uphold strict food safety, hygiene, and organisational standards in accordance with restaurant and regulatory requirements.
  • Train, guide, and mentor junior kitchen team members, fostering a culture of discipline, teamwork, and continuous improvement.
  • Collaborate closely with the front-of-house team to ensure seamless communication and exceptional guest experiences.
  • Assist in inventory management, including ordering, receiving, and proper storage of ingredients and supplies.
  • Stay updated on contemporary culinary trends, techniques, and ingredients, particularly within Asian cuisine.

Qualifications:

  • Previous experience in a fine-dining or upscale kitchen environment, with at least 2 years in a supervisory or senior cook role.
  • Strong technical cooking skills and mastery of modern and traditional Asian culinary techniques.
  • Excellent organisational abilities, with a keen eye for detail, consistency, and presentation.
  • Ability to lead, motivate, and support team members in a fast-paced, high-performance kitchen.
  • Passion for culinary innovation, craftsmanship, and delivering exceptional dining experiences.
  • Knowledge of food safety and hygiene standards; relevant certifications are a plus.
