We are a new Japanese restaurant in Central, offering only the finest cuisine and service. To uphold these standards, we are seeking a Restaurant Manager who shares our commitment to excellence and can lead our team in delivering an exceptional dining experience.

Key Responsibilities:

• Oversee Daily Operations – Manage the day-to-day running of the restaurant, including opening and closing procedures, scheduling, and ensuring smooth service during peak hours.
• Maintain Food Quality & Authenticity – Ensure all dishes meet the restaurant's standards for freshness, presentation, and working closely with the head chef.
• Manage Staff & Training – Recruit, train, and supervise kitchen and front-of-house teams, instilling wholehearted service and teamwork hospitality principles.
• Control Inventory & Suppliers – Order and manage stock of ingredients, build relationships with reliable suppliers, and minimize waste and spoilage.
• Handle Finances & Budgeting – Monitor revenue, control costs, set menu pricing, prepare financial reports, and ensure profitability targets are met.
• Ensure Health, Safety & Hygiene Compliance – Enforce food safety regulations, cleanliness standards, and licensing requirements.
• Deliver Excellent Customer Service – Greet guests, handle complaints and special requests, and maintain the calm, respectful atmosphere expected in a dining experience.

What We're Looking For:

• Minimum 5 years in restaurant management, ideally in a high-volume fine-dining setting.
• Michelin-starred or Michelin-recommended background is a plus.
• Passionate about Japanese cuisine.
• Deep knowledge of Japanese whisky, sake, and highball preparation.
• Fluent English required; Cantonese preferred; Mandarin is a plus.
• Strong leadership and communication skills.
• Proficiency in MS Excel and strong analytical and problem-solving skills
