THE JOBSCOPE

• Supervise and coordinate the daily activities of the Stewarding team.

• Ensure all kitchen utensils, crockery, cutlery, glassware, and equipment are properly cleaned and sanitised.

• Monitor the dishwashing and cleaning process to ensure proper hygiene standards are maintained.

• Ensure kitchen and back-of-house areas are kept clean, organised, and hygienic at all times.

• Assign daily duties and ensure adequate manpower coverage.

• Conduct daily briefings and provide guidance to Stewarding staff.

• Monitor the proper use and handling of cleaning chemicals and equipment.

• Ensure cleaning equipment and machines are properly operated and maintained.

• Monitor stock levels of cleaning supplies, chemicals, and stewarding equipment.

• Assist in stock taking and maintain proper inventory records.

• Report damaged or faulty equipment and arrange for repair or replacement.

• Ensure proper waste segregation and disposal procedures are followed.

• Work closely with the Kitchen and Food & Beverage teams to support smooth operations.

• Ensure compliance with food safety, hygiene, occupational safety, and company standards.

• Conduct regular inspections of kitchen and back-of-house areas.

• Support preparation for internal and external hygiene audits and inspections.

• Perform any other duties assigned by the management.

REQUIREMENTS

• Experience in Stewarding or Kitchen Operations.

• Previous experience in a Steward Supervisor or Senior Steward role is preferred.

• Experience in a hotel, restaurant, banquet, or large-scale kitchen environment is an advantage.

• Good knowledge of kitchen hygiene, sanitation, cleaning procedures, and chemical handling.

• Good leadership and team supervision skills.

• Able to work in a fast-paced environment.

• Good communication and interpersonal skills.

• Physically fit and able to perform hands-on stewarding duties when required.

• Willing to work on shifts, weekends, and public holidays.
