The Head Baker is responsible for leading the bakery production team and ensuring all baked products are produced with consistency, quality, and efficiency. This role oversees daily bakery operations, product standards, preparation planning, inventory coordination, and team management while maintaining a high standard of food safety and craftsmanship.
Key Responsibilities
- Lead and supervise daily bakery production operations
- Ensure consistency, quality, and presentation of all baked products
- Plan daily production schedules and coordinate preparation workflow
- Monitor ingredient usage, stock levels, and wastage control
- Train, guide, and develop bakery team members
- Maintain cleanliness, hygiene, and food safety standards at all times
- Support product development and continuous improvement initiatives
- Ensure equipment is properly maintained and used safely
- Work closely with management and other departments to support operational needs
Requirements
- Minimum 5 years of experience in bakery production or artisan baking environment
- Experience leading and managing a bakery team
- Strong understanding of bread, viennoiserie, pastry, or bakery production processes
- Good organizational and time management skills
- Able to work in fast-paced production environment
- Strong attention to detail and product consistency
- Positive leadership attitude and team player mentality
- Able to work early mornings, weekends, and public holidays when required
