1. GENERAL DUTIES
- Assist Executive Chef to ensure that maintains the best reputation mission and vision of the company in culinary food production.
- Assists and control expenses, yields portioning, food cost and labour, to ensure a profitable food production level accordingly to the set goals.
- Conduct training, motivate and develop of all the kitchen staff down lines.
- Maintain the set standards of Safety and Hygiene in all the areas of the kitchen.
- Check all purchase and usage only the good quality products.
- Maintains and sustain the food quality and the standard according the company standard policy and procedures.
- Recommends for kitchen staff promotions, recognition and awards.
- Controls staff levels according to the established manning guide.
- Liaise closely with the Executive Chef on new methods of cutting, portioning and marinating recipes.
2. OPERATIONAL DUTIES
- aintain and check defect all operating and fixed asset equipment.
- Monitor and control staff roster, vacation, attendance and overtime records.
- Attend chef briefing as required.
- Must present with his staff in difficult situations or during busy period.
- Take corrective action if necessary.
- Is responsible for all food production quality and quantity.
- Supervises the food production and developed creative in his field.
- Monitor and report food waste activity.
- Wear company uniform and name badge.
- Familiarize himself with safety, hygiene, emergency and first aid procedures.
- Behaves at all times in a manner that projects the good image of the company.
- Control and monitor Market List, Food Requisition, Food Store and Inventory par stock.
- Checks and update report in kitchen briefing.
- Must involve, monitor and supervise in all food operation.

Pay: RM2,500.00 - RM3,000.00 per month
