Holiday Inn Singapore Orchard City Centre is looking for a Hygiene Manager who is responsible for the highest level of sanitation and hygiene standards in the hotel. To ensure all food served to guest and employees are free of microbiological, chemical and physical contamination and all work area conform to minimum requirements set by local health authorities.
Responsibilities include, but are not limited to:
Document and control – establish, implement, and maintain documented procedures in compliance with ISO 22000, including weekly operational checklists (food preparation, storekeeping, cost control, stewarding, food production) and food waste reports; as well as monthly food safety training records, laboratory test reports, and supplier audit reports. Consolidate and submit monthly management reports to the Food and Beverage Director and Executive Chef, highlighting performance, compliance status, non-conformities, and recommended corrective actions.
Premises – Implement critical control points, F&B and engineering preventive maintenance list and action plan rectification
Delivery, Storage, Preparation and Serving Control – establish and implement control and monitoring procedures across all stages of food handling, including tracking of supplier operating licenses; daily shift-based checks for chiller temperature control; dry store stock rotation; and defined control points for cooking, storage, and serving. Ensure all food handling, storage, and preparation practices are monitored and comply with established SOPs.
Cleaning – implement regular tour of the house with executive chef and chief steward and duty engineer, weekly hygiene committee to review minutes and outstanding issues, dishwashing control points
To carry out all duties within the Food and beverage department relating to hygiene and sanitation in a confidential and professional manner.
Liaise with and respond to relevant government authorities to ensure strict compliance with all applicable food hygiene regulations, including SS590 HACCP, ISO 22000, and local statutory requirements.
Maintain accurate records of all kitchen and bar inspections, ensuring timely follow-up actions and implementation of corrective measures where required. Investigate QA/QC issues, customer feedback, and product non-conformities to uphold the highest hygiene and food safety standards.
Assist the hotel management in applying and renewal of hygiene licenses & certificate
chedule and arrange periodical and ad-hoc pest control
Demonstrate Awareness of Occupational Health and Safety Responsibilities (OH&S) policies and procedures and ensure all procedures are conducted safely and within OH&S guidelines
Be aware of duty of care and adhere to occupational, health and safety legislation, policies and procedures
Be familiar with property safety, first aid and fire and emergency procedures and operate equipment safely and sensibly
Initiate action to correct a hazardous situation and notify supervisors of potential dangers
Support the hotel’s corporate responsibility initiatives in the areas of community involvement, environment management, workplace health & safety and food safety, drive action plans as required to achieve hotel corporate responsibility objectives
What We Need From You
2 years of experience in food safety and hygiene, with at least 1 year as a supervisory role.
Required Skills:
Able to read, write and communicate in English
Computer literacy
Good communication, coordination, team management and problem-solving skills
HACCP Internal Audit Certificate
ISO 22000 Internal Audit Certificate
Food Safety Course Level 4
