Job Description

Responsibilities

We are looking for a skilled and creative Chocolate Chef (Chocolatier) to lead the development, production, and quality of our chocolate products — from bonbons and moulded chocolates to café-based dessert items. The ideal candidate combines technical craft (tempering, moulding, enrobing, ganache work) with creativity, precision, and an eye for consistent quality at production scale.

Key Responsibilities

  • Produce chocolate products (bonbons, bars, moulded pieces, pralines, and seasonal items) to a consistently high standard
  • Temper and handle chocolate correctly to achieve proper snap, gloss, and shelf stability
  • Develop new recipes, flavours, and seasonal collections in line with brand direction and market trends
  • Prepare fillings, ganaches, and pastry components used in chocolate products and café desserts
  • Maintain strict hygiene, food safety, and quality control standards in line with regulatory requirements
  • Manage ingredient inventory, portioning, and minimise wastage in daily production
  • Ensure consistency in taste, appearance, and packaging presentation across batches
  • Collaborate with the workshop/facilitation team to support hands-on chocolate-making sessions when needed
  • Support production planning for B2B orders, export shipments, exhibitions (e.g., MIFB, FDM), and seasonal demand spikes
  • Train and guide junior kitchen staff or workshop assistants on chocolate-handling techniques
  • Keep production and storage areas compliant with food safety and audit requirements

Requirements

  • Culinary or pastry qualification, with a specialisation or strong background in chocolate/confectionery work preferred
  • Minimum 2–3 years of hands-on experience as a chocolatier, pastry chef, or chocolate production chef
  • Solid technical knowledge of tempering, moulding, enrobing, and ganache/filling work
  • Understanding of food safety standards (HACCP or similar an advantage)
  • Creative palate with ability to develop new flavours and product concepts
  • Able to work efficiently under production timelines, especially around peak seasons and events
  • Bilingual in English and Bahasa Malaysia; able to guide/train local staff
  • Physically able to stand for extended periods and work in a kitchen/production environment

Pay: RM2,500.00 - RM3,500.00 per month
