The Sushi & Sashimi Chef is responsible for preparing high-quality sushi, sashimi, and other Japanese dishes while ensuring food safety, freshness, consistency, and presentation. The chef maintains hygiene standards, manages ingredients efficiently, and supports daily kitchen operations to deliver an exceptional dining experience.
- Prepare sushi, sashimi, nigiri, maki rolls, hand rolls, and other Japanese menu items according to recipes and company standards.
- Select, inspect, and prepare fresh fish, seafood, vegetables, and other ingredients.
- Fillet, portion, slice, and store seafood using proper Japanese knife techniques.
- Ensure all ingredients are fresh, properly labeled, and stored according to food safety regulations.
- Maintain consistency in taste, portion size, and presentation of every dish.
- Prepare mise en place before service and replenish ingredients throughout operating hours.
- Monitor stock levels and report ingredient shortages to the Head Chef or Kitchen Manager.
- Minimize food waste through proper portion control and inventory management.
- Maintain cleanliness and sanitation of the sushi station, tools, knives, cutting boards, and equipment.
- Follow HACCP, food hygiene, and workplace safety procedures at all times.
- Perform daily temperature checks for refrigerators, freezers, and seafood storage when required.
- Receive and inspect seafood deliveries to ensure quality and freshness.
- Rotate stock using FIFO (First-In, First-Out) principles.
- Assist in menu development, seasonal specials, and new sushi creations.
- Train and mentor junior sushi chefs and kitchen assistants when required.
- Coordinate with kitchen and service staff to ensure timely food preparation and delivery.
- Handle customer special requests and dietary requirements whenever possible.
- Maintain proper care and sharpening of Japanese knives and kitchen equipment.
- Support opening and closing kitchen procedures.
- Comply with company policies, standard operating procedures (SOPs), and health regulations.
- Perform any other duties assigned by the Head Chef or Management.
Pay: RM3,000.00 - RM4,000.00 per month
