Job Summary: The Hygiene Manager is responsible for upholding the highest standards of food safety, sanitation, and hygiene compliance across the hotel. This role leads the implementation, maintenance, and continuous enhancement of hygiene systems in accordance with local regulations and Shangri-La Food Safety System.
Key Responsibilities
- Ensure all food and beverage served to guests and colleagues are safe, hygienic, and compliant with food safety standards
- Ensure all food handlers are properly trained in Shangri-La Food Safety standards, comply with sanitation practices, are medically fit, and adhere to local health regulations
- Maintain full compliance with HACCP, Shangri-La Food Safety System, and local regulatory requirements.
- Conduct regular hygiene audits and inspections across all Food & Beverage outlets and back-of-house areas
- Monitor and enforce proper sanitation, food handling, and storage practices at all times.
- Support continuous improvement of hygiene systems and promote a strong food safety culture across departments
Qualifications
- Bachelor’s Degree in Food Science/ Food Engineering / Food Safety / Hotel Management.
- Good command in writing & speaking English.
- Certified in HACCP and ISO 22000
- Good knowledge of food production processes and food safety practices
- Minimum of 2 years experience in food safety / quality industry
- Due to work permit restrictions, only citizens of Malaysia and Permanent Residents of Malaysia shall be considered.
