Job Summary:

As a Demi Chef, you will work closely with the Chef de Partie and Head Chef to ensure the smooth operation of the kitchen. You will be responsible for preparing ingredients, cooking dishes to our exact specifications, and maintaining the highest standards of food safety. A key focus of this role involves utilizing modern kitchen technology, specifically the operation and management of commercial combi ovens, to optimize our food production and maintain consistent quality.

Key Responsibilities:

  • Combi Oven Operations (Primary Focus): Operate, program, and manage commercial combi ovens for various cooking methods (steaming, roasting, baking, and re-thermalizing). Ensure precise temperature and moisture controls are utilized to achieve consistent, high-quality results.
  • Food Preparation & Execution: Prepare and cook menu items strictly according to standard recipe cards and presentation standards.
  • Station Management: Assist the Chef de Partie in managing a specific section of the kitchen, ensuring it is fully prepped and organized before service.
  • Inventory & Cost Control: Assist in daily inventory checks, maintain accurate PAR stock levels, and strictly follow portion controls to minimize food wastage.
  • Equipment Maintenance: Perform daily cleaning and basic preventative maintenance on combi ovens and other kitchen equipment. Report any technical faults immediately.
  • Food Safety & Hygiene: Uphold the highest standards of cleanliness and sanitation. Ensure strict compliance with local food safety regulations, Halal guidelines, and HACCP standards.

Requirements:

  • Minimum 2 years of experiences in F&B operations.
  • Proven experience as a Commis I or Demi Chef in a fast-paced restaurant, cafe, or hotel environment.
  • Specific Equipment Knowledge: Hands-on, practical experience operating and troubleshooting commercial combi ovens (e.g., Rational, Unox, or ************* brands).
  • Strong understanding of various cooking methods, ingredients, equipment, and procedures.
  • Ability to work efficiently under pressure and maintain a high standard of output during peak service hours.
  • Excellent understanding of food safety, hygiene, and cross-contamination prevention.
  • A Certificate or Diploma in Culinary Arts or a related field is an advantage.
  • Must be willing to work on shifts, weekends, and public holidays.
