Halal Executive cum Kitchen Coordinator
Location: Grand Swiss-Belhotel Melaka
Job Summary
The Halal Executive cum Kitchen Coordinator is responsible for ensuring the hotel's compliance with all halal certification requirements, halal assurance systems and relevant regulatory standards. The role also supports the daily administration and coordination of kitchen operations, ensuring effective communication, documentation, inventory control and operational efficiency within the culinary department.
Key Responsibilities Halal Management
- Ensure continuous compliance with halal certification requirements and relevant regulatory guidelines.
- Maintain halal documentation, records, reports and certification files accurately.
- Coordinate halal audits, inspections and certification renewal processes.
- Conduct regular internal halal compliance checks within kitchen and food production areas.
- Ensure all food ingredients, suppliers and products meet halal requirements.
- Organize halal awareness training and briefings for employees.
- Liaise with relevant authorities, certification bodies, suppliers and internal departments regarding halal matters.
Kitchen Coordination
- Coordinate daily administrative activities within the kitchen department.
- Maintain kitchen records, reports, attendance, schedules and operational documentation.
- Assist in inventory monitoring, stock control and purchasing coordination.
- Coordinate communication between the kitchen, purchasing, stores, stewarding and other hotel departments.
- Support banquet, events and special function planning by ensuring operational requirements are properly communicated.
- Monitor kitchen maintenance requests and follow up on equipment servicing requirements.
- Assist the Executive Chef in ensuring smooth daily kitchen operations and compliance with hotel standards.
General Responsibilities
- Ensure compliance with food safety, hygiene, sanitation and occupational health and safety standards.
- Support continuous improvement initiatives within the culinary department.
- Perform other duties assigned by management in line with operational requirements.
Requirements
- Diploma or Degree in Food Science, Halal Management, Hospitality Management, Culinary Arts or a related field.
- Minimum 1-2 years of experience in halal compliance, food safety, kitchen administration or hotel operations.
- Knowledge of Malaysian halal certification requirements and halal assurance practices.
- Familiarity with food safety standards, hygiene regulations, and kitchen operations.
- Strong administrative, organizational and documentation skills.
- Proficient in Microsoft Office applications.
- Excellent communication and interpersonal skills.
- Ability to work independently and manage multiple tasks effectively.
- Experience in the hospitality or hotel industry is preferred.

Pay: RM2,200.00 - RM2,800.00 per month
