Key Responsibilities
- Manage dishwashing, pot washing, kitchen cleaning, and waste disposal operations.
- Supervise stewards, dishwashers, and kitchen utility staff.
- Ensure cleanliness and sanitation of kitchens, stores, back-of-house areas, and equipment.
- Maintain inventories of china, glassware, silverware, kitchen utensils, and equipment.
- Control operating costs and minimize breakage, loss, and wastage.
- Ensure compliance with food safety, hygiene, and occupational safety standards.
- Schedule staff shifts and monitor productivity.
- Coordinate with Executive Chef, Banquet, and F&B teams for events and daily operations.
- Train employees on cleaning procedures, chemical handling, and safety practices.
- Handle departmental reports, inspections, and audits.
Typical Requirements
- High school diploma or equivalent.
- Usually 2–4 years of experience in stewarding, kitchen operations, food & beverage, or hospitality.
- Supervisory or team-lead experience is often preferred.
- Knowledge of HACCP, food hygiene, sanitation, and inventory control.
