Job Summary At PARKROYAL A'Famosa Melaka Resort, the back-of-house operations are critical to delivering a premium guest experience. The Steward Supervisor is responsible for supervising the day-to-day operations of the stewarding department. The supervisor acts as a hands-on leader, coordinating manpower, managing inventory, and ensuring all operating equipment (crockery, glassware, flatware, and utensils) is cleaned, sanitized, and supplied efficiently to support smooth culinary operations.
Primary Responsibilities
- Operations & Kitchen Sanitation
- Supervise Steward Attendants, allocate daily tasks, and monitor the efficiency of dishwashing and pot-washing stations.
- Maintain total sanitation and cleanliness of all kitchen floors, walls, tiles, counters, corridors, and walk-in refrigerators/freezers.
- Ensure all major cleaning equipment—especially automatic dishwashing machines and trash compactors—are functioning correctly. Coordinate with Engineering and chemical technicians for any repairs or chemical calibrations.
- Oversee proper garbage disposal, sorting, and the resort's recycling programs. Ensure waste management areas are kept clean and hazard-free.
- Equipment Control & Inventory Management
- Ensure all F&B outlets and banquet events have a sufficient supply of clean Operating Equipment (OE) to perform smoothly during high-turnover meal periods.
- Enforce proper handling and storage techniques for all chinaware, glassware, and silver to minimize loss and breakage.
- Assist the Chief Steward in conducting monthly or periodic physical inventories of operating equipment, chemicals, and cleaning supplies.
- Maintain strict organization and safety protocols within the chemical and equipment storerooms.
- Food Safety, HACCP, and Halal Compliance
- Actively update and maintain daily Hazard Analysis Critical Control Point (HACCP) checklists, temperature logs, and chemical charts.
- Ensure strict adherence to local JAKIM Halal standards regarding the handling, washing, and segregation of utensils and equipment.
- Keep all back-of-house areas pristine and ready for regular internal and external hygiene and sanitation audits.
- Team Leadership & Coaching
- Conduct ongoing training for Steward Attendants regarding chemical safety, correct machine operation, grooming, and personal hygiene.
- Assist with managing manpower schedules, monitoring productivity, and fostering a collaborative, positive team environment.

Job Requirements & Qualifications
- Experience: Minimum of 2–3 years of stewarding experience in a hotel or resort environment, with at least 1 year in a supervisory or team-lead role.
- Education: High School Diploma, SPM, or a Certificate/Diploma in Hospitality/Hotel Management.
- Technical Knowledge: Thorough understanding of industrial dishwashing equipment, cleaning chemicals (handling and safety protocols), and waste management.
- Certifications: Strong working knowledge of HACCP and food safety regulations. Valid food handler certificate and typhoid vaccination (standard Malaysian hospitality requirement).
- Skills: Strong communication skills (English and Bahasa Malaysia), good organizational abilities, and problem-solving initiative.
