Responsibilities

Position Overview

Moon Chay is seeking a passionate and innovative Manager, Research & Development (R&D) to lead the development of new vegan products, improve existing menu offerings, and support the growth of our brand. This role is responsible for creating high-quality, healthy, and authentic Vietnamese vegan cuisine that meets customer expectations and market trends.

Key Responsibilities

1. Product Research & Development

  • Research market trends in vegan, plant-based, healthy, and functional foods in Singapore and internationally.
  • Develop new food and beverage products, seasonal menus, and signature dishes for Moon Chay.
  • Continuously improve existing recipes to enhance taste, presentation, nutritional value, and consistency.
  • Explore and test new plant-based ingredients and cooking techniques.

2. Recipe Standardization & Documentation

  • Create and maintain standardized recipe cards for all food and beverage items.
  • Develop Standard Operating Procedures (SOPs) for food preparation and production.
  • Establish ingredient specifications, portion control, and storage guidelines to ensure consistency across operations.

3. Cost Management & Product Optimization

  • Calculate and monitor food cost and beverage cost for all products.
  • Identify opportunities to optimize ingredient usage and reduce waste while maintaining quality standards.
  • Work closely with suppliers to source quality ingredients at competitive prices.

4. Product Implementation & Training

  • Collaborate with the Executive Chef and Operations Team to launch new menu items.
  • Train kitchen staff on recipes, preparation methods, plating standards, and production procedures.
  • Ensure smooth implementation of new products into daily operations.

5. Quality Assurance & Continuous Improvement

  • Conduct regular product evaluations and quality control assessments.
  • Gather customer feedback and analyze sales performance to improve menu offerings.
  • Ensure all products comply with Singapore food safety regulations and company quality standards.

6. Strategic Brand Development

  • Develop unique and innovative products that strengthen Moon Chay’s market position.
  • Support menu planning, promotional campaigns, and brand-building initiatives.
  • Contribute to future expansion projects and new business opportunities.

Requirements

  • Diploma or Degree in Food Science, Culinary Arts, Hospitality Management, or a related field.
  • Minimum 3 years of experience in food product development, menu development, R&D, or restaurant kitchen management.
  • Experience in vegan, vegetarian, or healthy food concepts is highly preferred.
  • Strong understanding of food costing, inventory management, and restaurant operations.
  • Creative mindset with excellent problem-solving and project management skills.
  • Strong communication, leadership, and team training abilities.
  • Proficiency in English; Vietnamese language skills are an advantage.
