Job Description

Responsibilities

Job Requirements

  • Minimum 4 years of experience in a commercial kitchen, local cuisine or roast meat restaurant
  • Familiar with food safety, hygiene standards, and basic HACCP/halal handling practices
  • Able to read and follow recipes, prep lists, and portioning standards consistently
  • Basic stock management skills (checking inventory, identifying shortages, FIFO rotation)
  • Able to supervise and coordinate a small team (3–6 kitchen staff)
  • Physically fit for standing, lifting, and working in a hot kitchen environment
  • Basic literacy for checklists, stock forms, and simple reporting (Bahasa Malaysia and/or English)
  • Able to work shifts including weekends and public holidays
  • Halal-conscious food handling awareness (preferred, given restaurant standards)

Job Scope

Daily Operations

  • Open/close kitchen station according to checklist (equipment checks, cleanliness, prep readiness)
  • Assign stations and tasks to kitchen crew at start of shift
  • Monitor food prep quality, portion consistency, and plating standards against SOP
  • Ensure roast duck/chicken cooking times and temperatures meet quality standards
  • Conduct spot checks during service for speed, hygiene, and consistency

Stock & Procurement

  • Check daily stock levels (raw ingredients, sauces, packaging) and flag shortages to Ops Manager
  • Ensure proper storage, labeling, and rotation (FIFO) of ingredients
  • Report wastage and spoilage daily

People & Team

  • Supervise kitchen crew attendance, punctuality, and task completion
  • Train new kitchen staff on prep methods, hygiene SOPs, and station setup
  • Address minor performance/discipline issues; escalate serious issues to Ops Manager

Hygiene & Compliance

  • Ensure kitchen cleanliness throughout the day (not just closing)
  • Maintain food safety standards (temperature checks, storage rules, expiry monitoring)
  • Ensure compliance with halal handling practices

Reporting

  • Submit end-of-day kitchen report (stock used, wastage, issues) — can be a simple ClickUp form/checklist
  • Flag equipment issues or maintenance needs immediately

Pay: RM2,300.00 - RM3,300.00 per month
