Role Description

This is a full-time, on-site Sous Chef role at Hard Rock Hotel Desaru Coast. As a key member of the Culinary leadership team, the Sous Chef supports the Executive Sous Chef in overseeing daily kitchen operations, ensuring exceptional food quality, consistency, and guest satisfaction across all dining outlets.

The Sous Chef plays a vital role in leading, developing, and inspiring the culinary team while maintaining the highest standards of food preparation, hygiene, and operational excellence. This position requires a passionate culinary professional who thrives in a fast-paced environment and is committed to creating memorable dining experiences for every guest.


Key Responsibilities

  • Assist the Executive Sous Chef in managing day-to-day kitchen operations across all assigned outlets.
  • Lead, coach, and motivate culinary team members to ensure high performance and continuous development.
  • Ensure consistency in food preparation, presentation, taste, and quality standards.
  • Monitor and maintain food safety, hygiene, sanitation, and HACCP compliance at all times.
  • Support menu planning, recipe development, and seasonal promotions to enhance guest satisfaction.
  • Control food costs through effective inventory management, portion control, and waste reduction initiatives.
  • Manage stock levels, ordering, receiving, and storage of food products to ensure operational efficiency.
  • Supervise food production during service periods and ensure smooth kitchen operations.
  • Collaborate with other departments to support special events, promotions, and guest requirements.
  • Maintain a positive and productive work environment that reflects Hard Rock's culture and service standards.
  • Assist in scheduling, manpower planning, and performance management of culinary team members.
  • Stay informed on culinary trends and contribute innovative ideas to enhance the dining experience.


Qualifications / Skills / Competencies

  • Diploma/Degree in Culinary Arts, Hospitality Management, or equivalent professional experience
  • Strong culinary knowledge and food preparation skills
  • Proven leadership and team development capabilities
  • Excellent communication and interpersonal skills
  • Strong organizational and time management skills
  • Ability to perform effectively under pressure in a high-volume environment
  • Knowledge of food safety, sanitation, and HACCP standards
  • Attention to detail and commitment to quality
  • Passion for culinary innovation and guest satisfaction


Industry Experience

  • Minimum 5–8 years of culinary experience within hotels, resorts, or upscale dining establishments
  • At least 2–3 years in a supervisory role, such as Junior Sous Chef or Sous Chef
  • Experience in multi-outlet kitchen operations preferred
  • Strong understanding of kitchen SOPs, food costing, inventory management, and quality assurance
  • Experience in luxury hospitality environments is an advantage
