Key Responsibilities
Reporting to: Managing Director & Head Chef
- Culinary Production & Quality Control: Oversee the daily baking of pretzels, rolls, and specialty breads to ensure optimal freshness and consistent quality. Monitor oven temperatures and baking times rigorously to uphold high standards and minimize wastage.
- Menu Development & Preparation: Design and meticulously prepare authentic German-style sandwiches and boards, ensuring premium presentation and flavor. Actively assist in the creation and ongoing development of the menu, factoring in seasonality, customer preferences, and food costs.
- Guest Experience & Education: Proactively welcome guests and serve as an in-house expert on German bread culture. Educate customers on various products and provide tailored recommendations for bakery items and beer pairings.
- Service & Point of Sale: Efficiently operate the POS system to process payments and ensure highly accurate order fulfillment.
- Operational Excellence: Execute comprehensive mise en place prior to service. Perform detailed opening and closing duties, including station preparation and nightly shutdown procedures. Address and resolve operational challenges decisively as they arise.
- Inventory & Cost Management: Monitor and assist in managing stock levels for all bakery items. Diligently track bread wastage and implement effective cost-control measures within the bakery section.
- Hygiene & Safety Standards: Maintain an impeccably clean food and beverage production and service environment. Strictly adhere to all proper food safety, sanitation, and hygiene protocols.
- Cross-Functional Collaboration: Maintain seamless communication with kitchen and bar staff to ensure a synchronized flow between food and beverage service. Collaborate with the LMI office to address customer feedback, resolve concerns, and ensure overall operational efficiency.
Requirements
- Culinary Expertise: Proven experience in baking, pastry, or a similar culinary role. Familiarity with European or authentic German baking techniques (e.g.,pretzels, artisanal breads) is highly advantageous.
- Customer-Facing Experience: Strong interpersonal and communication skills with a proven ability to engage customers, provide personalized recommendations, and deliver exceptional service.
- Operational Proficiency: Experience operating POS systems, handling cash, and executing front-of-house service duties alongside back-of-house culinary tasks.
- Business Acumen: Detail-oriented with a solid understanding of inventory management, portion control, and minimizing food wastage.
- Hygiene & Safety: Comprehensive knowledge of industry-standard food safety, sanitation, and hygiene regulations.
- Adaptability & Teamwork: A collaborative mindset with the ability to work seamlessly with both kitchen and bar teams. Must be flexible to work varied shifts, including weekends and public holidays as required.
