Executive Pastry Chef (Production)

Job Summary
The Executive Pastry Chef (Production) is responsible for overseeing large-scale pastry and bakery production operations, ensuring consistency, quality, food safety, and efficiency. The role includes product development, production planning, manpower management, cost control, and maintaining hygiene standards for retail, HORECA, OEM, and frozen or ready-to-eat product lines.
Key Responsibilities
Production & Operations
* Manage daily pastry and bakery production in the central kitchen or factory.
* Ensure production schedules are completed on time and according to demand forecasts.
* Standardize recipes, production methods, and portion controls.
* Monitor consistency, taste, texture, appearance, and product quality.
* Oversee frozen, chilled, ambient, and ready-to-eat pastry and bakery products.
* Improve workflow efficiency and reduce wastage.
Product Development
* Develop new pastry, dessert, bakery, local kuih and viennoiserie products.
* Innovate products suitable for retail, café, HORECA, and OEM markets.
* Adapt recipes for mass production while maintaining quality.
* Work closely with branding and sales teams on seasonal or market-driven products.
Team Management
* Lead and train pastry production staff and kitchen assistants.
* Schedule manpower according to production requirements.
* Ensure staff follow SOPs, hygiene standards, and safety procedures.
* Build a culture of discipline, teamwork, and continuous improvement.
Quality & Food Safety
* Ensure compliance with GMP, HACCP, Halal, and food safety standards.
* Maintain cleanliness and hygiene throughout production areas.
* Monitor ingredient handling, storage temperatures, and shelf-life standards.
* Conduct regular quality checks on finished products.
Inventory & Cost Control
* Monitor ingredient usage and stock levels.
* Coordinate purchasing requirements with procurement teams.
* Control food costs, wastage, and production yield.
* Assist in costing and pricing calculations for products.
Equipment & Maintenance
* Ensure bakery and pastry equipment are properly maintained.
* Report breakdowns and coordinate preventive maintenance.
* Monitor production capacity and recommend equipment upgrades when needed.
Requirements
* Diploma or Degree in Pastry Arts, Culinary Arts, or related field preferred.
* Minimum 5–8 years experience in pastry or bakery production.
* Experience in central kitchen, factory, or large-scale production environment preferred.
* Strong knowledge of pastries, breads, cakes, desserts, frozen products, and viennoiserie.
* Familiar with food manufacturing SOPs and hygiene regulations.
* Leadership and team management skills.
* Ability to work under pressure and meet production deadlines.
Preferred Skills
* Experience with OEM or retail food production.
* Knowledge of shelf-life testing and product packaging.
* Understanding of costing and production planning.
* Familiarity with Halal and HACCP compliance.
