Jobs Kreate is recruiting on behalf of a client for a shipboard Chef de Partie position. The successful candidate will independently manage a main galley section, maintain food quality and presentation standards, and guide junior culinary team members during preparation and service.

Important: Cruise ship grading may differ from land-based hospitality structures. Candidates may be offered a position one or two ranks below their current land-based role, subject to the cruise line’s assessment and operational requirements.

• Open to Malaysian and Singaporean citizens only.

• This is a full-time position. Part-time applications will not be considered.

• Minimum 8 years of culinary experience as a Chef de Partie or in a similar position within a 4-star or 5-star hospitality or restaurant environment.

• Advanced culinary skills with strong knowledge of both hot and cold kitchen sections.

• Able to independently manage a main galley section with minimal supervision.

• Experience leading, training and developing multicultural culinary teams.

• Strong knowledge of food safety, public health and sanitation requirements.

• Fluent in English with the ability to understand and communicate menus, recipes and operational instructions.

• Additional language abilities are an advantage.

• Strong leadership, motivational, coaching and organisational skills.

• Physically able to handle items weighing 50+ lbs.

• Able to work a minimum of 11 hours per day, 7 days per week while onboard.

• Flexible, stress-resistant and able to perform effectively in a demanding galley environment.

• Guest-focused and service-oriented with a professional appearance and high personal hygiene standards.

Salary

• Salary: USD 3,100

• Contract duration: 6 months

• Independently manage a main galley section and oversee all related food production.

• Follow approved recipes, dish specifications and presentation standards.

• Maintain consistent food quality, taste and presentation throughout preparation and service.

• Control the assigned service line during meal periods.

• Prepare show plates, tastings and recipe trials when requested.

• Review recipes daily and maintain organised recipe records for the assigned section.

• Prepare electronic food requisitions and verify stock available in galley stores.

• Check daily storeroom deliveries and report shortages or discrepancies.

• Control food production and apply economical working practices to minimise wastage.

• Ensure mise-en-place is completed before service.

• Maintain clean-as-you-go practices and ensure food preparation and storage comply with public health requirements.

• Identify operational concerns and training needs and report them to galley management.

• Lead, assign duties to and train junior culinary team members.

• Support performance reviews, crew communication, recognition and succession planning.

• Maintain working-hour records and follow Maritime Labour Convention requirements.

• Support special functions, itinerary changes and last-minute operational requests.

• Follow all onboard public health, environmental, PPE, safety, security and emergency procedures.
