Job Description

Requirements

  • Minimum 2-5 years of experience as Head Chef, Sous Chef, or Senior Chef in a kopitiam, café, or casual dining environment.

  • Strong knowledge of kitchen operations, inventory management, and food costing.

  • Experience in menu planning and product development (R&D).

  • Proven leadership and team management skills.

  • Good understanding of food safety and hygiene standards.

  • Strong organizational, communication, and problem-solving skills.

  • Able to work independently and under pressure in a fast-paced environment.

  • Willing to work shifts, weekends, and public holidays.

  • Experienced in preparing Malaysian kopitiam and local dishes, with additional capability in Southeast Asian and Western cuisine.

Responsibilities

  • Oversee daily kitchen operations and ensure smooth workflow.

  • Manage inventory, stock control, ordering, and food cost to minimize wastage and maximize profitability.

  • Monitor and maintain accurate costing for all menu items.

  • Lead, train, coach, and develop kitchen staff to ensure consistent performance.

  • Conduct onboarding and continuous skills training for team members.

  • Research and develop new menu items, recipes, and seasonal offerings.

  • Plan, review, and update menus based on market trends and customer preferences.

  • Ensure consistent food quality, taste, presentation, and portion control.

  • Maintain high standards of food safety, hygiene, and sanitation in compliance with regulations.

  • Monitor kitchen cleanliness and ensure all equipment is properly maintained.

  • Work closely with management on operations, promotions, and business strategies.

  • Travel outstation when required to support outlet openings, training, or operations.

  • Manage and operate assigned kitchen section independently.

  • Prepare and cook dishes according to SOP.

  • Support daily operations and handle peak hours efficiently.

  • Assist in staff scheduling and daily kitchen supervision.

  • Guide and mentor junior staff when required.
