Responsibilities
Job Summary
The Pastry Head is responsible for overseeing all pastry and dessert operations, including product development, production planning, quality control, and cost management. This role requires strong leadership, the ability to work under pressure, and a high level of creativity and consistency to support business growth.
Key Responsibilities
1. Product Development (R&D)
Lead the research and development of new pastry and dessert items
Continuously improve existing products in terms of taste, presentation, and cost efficiency
Ensure all recipes are standardized and documented
2. Training & Quality Control
Train kitchen and outlet staff on pastry preparation, SOPs, and plating standards
Maintain consistent product quality across all outlets
Conduct regular checks to ensure compliance with hygiene and food safety standards
3. Operations & Production
Plan and manage daily production schedules to meet operational needs
Ensure timely delivery of products, especially during peak periods and tight deadlines
Maintain efficiency while working under high-pressure environments
4. Costing & Sourcing
Monitor and control food cost, ingredient usage, and wastage
Work closely with suppliers on sourcing, pricing, and quality of ingredients
Ensure cost-effective production without compromising quality
5. Manpower Planning & Labor Control
Plan manpower requirements and optimize staff scheduling
Monitor and control labor cost and productivity
Lead, supervise, and motivate the pastry team
6. Sales & Business Support
Support sales growth through menu innovation and seasonal offerings
Collaborate with operations and marketing teams on promotions and product launches
Analyze product performance and contribute to revenue improvement strategies
