Summary:
The Commis I is a senior level commis responsible for assisting in the preparation, cooking and presentation of food at a high standard. This position supports the Demi Chef and Chef De Partie in managing a specific kitchen section, ensuring consistency, quality, and hygiene at all times.
Key Responsibilities
Food Preparation & Cooking
I. Prepare and cook dishes according to standard recipes and presentation guidelines.
II. Ensure high quality taste, texture, and plating for all assigned dishes.
III. Handle complex preparation tasks with minimal supervision
IV. Support the Demi Chef in supervising food production during service.
Mise-En-Place
I. Prepare full mise en place for the section, ensuring readiness before service.
II. Check ingredient freshness, proper storage and correct labelling.
III. Verify quantity and quality to avoid shortages during operations.
Section Management
I. Assist in managing a specific kitchen station.
II. Ensure smooth workflow during peak service hours.
III. Take charge of the section in the absence of the Demi Chef.
Hygiene & Safety
I. Maintain strict cleanliness and hygiene of the work station at all times.
II. Comply with HACCP, food safety, and hotel hygiene standards.
III. Ensure safe handling, preparation and storage of food items.
IV. Clean and sanitize tools, equipment, and work areas after operations.
Inventory & Waste Control
I. Monitor stock levels and report shortages to seniors.
II. Ensure proper handling of ingredients to minimize wastage.
III. Assist in receiving and checking supplies for quality and quantity.
Teamwork & Communication
I. Work closely with Demi Chef and Chef De Partie to meet kitchen requirements.
II. Support other sections when necessary to ensure smooth kitchen operations.
III. Attend briefings, training sessions and contribute to menu improvements.
Requirements:
· Basic culinary knowledge and technical skills
· Ability to follow instructions and work under pressure
· Strong team player with good communication skills
· High standards of cleanliness and personal hygiene
· Ability to work long hours on feet and lift up to 50 lbs
· Flexibility to work shifts, including weekends and public holidays
Education and Qualifications:
· High School Diploma or equivalent
· Culinary degree or equivalent experience
· Food Safety Certification
Pay: RM1,900.00 - RM2,200.00 per month
