Location: Great World City 5 Days work week with split shift.
Support the Head Chef in delivering an exceptional omakase dining experience by preparing premium sashimi with precision, maintaining the highest standards of freshness, craftsmanship, and presentation.
Key Responsibilities:
Prepare and slice premium sashimi with high precision, respecting traditional techniques
Ensure top quality, freshness, and proper handling of seasonal seafood
Assist the chef in daily omakase service, including plating and course sequencing
Maintain strict hygiene and food safety standards in line with NEA regulations
Prepare mise en place for omakase service (portioning, garnishing, ingredient prep)
Support ingredient inspection and storage to preserve quality and integrity
Maintain a clean, organised, and disciplined workstation
Observe and learn omakase flow, with opportunity to progress into live counter service
(For senior staff) Interact with guests at the counter and explain dishes when required
Requirements:
Experience in sushi/sashimi or omakase environment
Strong knife skills and attention to detail
Passion for culinary arts and willingness to continuously learn
Understanding of premium ingredient handling and seasonality
Good discipline, hygiene practices, and professional attitude
Able to work in a fast-paced, high-standard environment
Comfortable working evenings, weekends, and public holidays
Preferred Qualifications:
Experience in omakase or fine-dining restaurant
Exposure to customer-facing counter service
